  • 2 cups heirloom tomatoes, sliced Choose the ripest, most colorful tomatoes for the best flavor.

  • 1/4 cup fresh herbs (basil, thyme, or oregano), chopped Use fresh herbs for maximum flavor.
  • 1 piece egg (for egg wash) Beaten for a glossy finish.
  • to taste salt and pepper Enhance the flavor of the tomatoes.
  • to drizzle olive oil Adds richness to the dish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Roll out your pie crust or galette dough on a floured surface until about 1/4 inch thick and transfer it to a baking sheet lined with parchment paper.
  • Arrange the sliced heirloom tomatoes in a circular pattern on the dough, leaving about a 2-inch border.
  • Sprinkle the tomatoes with salt and pepper.
  • Crumble the goat cheese over the tomatoes and scatter your fresh herbs evenly.
  • Fold the edges of the dough over the filling to create a rustic edge.
  • Beat the egg and brush it over the exposed crust.
  • Drizzle a light amount of olive oil over the top.
  • Bake for 30–35 minutes or until the crust is golden brown.
  • Let the galette cool for a few minutes before slicing and serving warm or at room temperature.

Notes

Store leftovers in the fridge for up to three days. Reheat in an oven to maintain the crispy crust. Enjoy as a light lunch, appetizer, or at gatherings.
