  • 1 pound boneless, skinless chicken breasts
  • 1 cup long-grain rice can be soaked for better results
  • 2 cups chicken broth or water
  • 1 cup honey BBQ sauce store-bought or homemade
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables peas, carrots, or bell peppers work well
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

  • In a large skillet or Dutch oven, heat the olive oil over medium heat.
  • Add the diced onion and cook for about 3-4 minutes until softened.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Season your chicken breasts with salt and pepper.
  • Add them to the skillet and sear for about 5 minutes on each side until golden brown.
  • Pour in the rice and chicken broth, stir to combine and ensure the rice is evenly distributed.
  • Drizzle the honey BBQ sauce over the chicken and rice and gently mix it to coat.
  • Add the mixed vegetables to the pan, stir them in, and bring everything to a gentle simmer.
  • Cover the skillet with a lid and let everything simmer on low heat for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid.
  • Once everything is cooked, fluff the rice with a fork and garnish with fresh parsley.

Notes

Make sure the chicken reaches an internal temperature of 165°F (75°C) for food safety. Store in an airtight container in the fridge for up to 3 days. Reheat with a splash of water to keep the rice moist.
