Ingredients
  

For the Chicken Marinade

  • 1 pound boneless, skinless chicken thighs or breasts
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar (or apple cider vinegar)
  • 1 tablespoon sesame oil (optional)

For the Skewers

  • Wooden or metal skewers Soak wooden skewers in water for 30 minutes prior to use.
  • Assorted vegetables (bell peppers, onion, zucchini) For skewering.

Preparation

  • In a mixing bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, sesame oil, salt, and pepper.
  • Cut the chicken into bite-sized pieces and coat it in the marinade. Let it marinate for at least 30 minutes, preferably overnight.
  • If using wooden skewers, soak them in water to prevent burning.
  • Thread the marinated chicken pieces onto the skewers, alternating with your chosen vegetables.

Cooking

  • Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  • Cook the skewers on the grill for 10-15 minutes, turning occasionally, until the chicken is fully cooked and has nice grill marks. For the oven, roast for 15-20 minutes, flipping halfway through.
  • During the last few minutes of cooking, brush the skewers with leftover marinade for extra flavor.

Serving

  • Let the skewers rest before serving. Enjoy with rice, a fresh salad, or dipping sauce.

Notes

For even cooking, cut chicken and vegetables into similar sizes. You can experiment with different marinades and add herbs for additional flavor.
