Ingredients
  

  • 8 oz cream cheese softened
  • 4 cups powdered sugar
  • cups shredded coconut sweetened or unsweetened
  • 1 teaspoon vanilla extract
  • 2 –3 tablespoons ground cinnamon for rolling

Instructions
 

  • In a large bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually mix in powdered sugar until fully combined and thick.
  • Stir in vanilla extract.
  • Fold in shredded coconut until a firm dough forms.
  • Scoop small portions and roll into oval or potato-shaped pieces.
  • Roll each piece lightly in cinnamon until coated.
  • Place on a tray and refrigerate 30–60 minutes to firm up before serving.

Notes

  • If the mixture feels sticky, add a little more powdered sugar.
  • Use a light hand with the cinnamon—just enough for color and flavor.
  • Chilling improves both texture and flavor.
