Ingredients
  

For the Crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups granulated sugar

For the Filling

  • 1 can (14 oz) sweetened condensed milk
  • 0.5 cups fresh key lime juice (about 4-6 key limes)
  • 3 large egg yolks
  • 2 tbsp zest of key limes

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar together until well combined. Press the mixture into the bottom of an 8×8-inch baking dish, creating an even layer. Bake for 10 minutes until slightly golden.
  • While the crust is baking, whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest in a large mixing bowl until smooth.
  • Once the crust is done, remove it from the oven and pour the key lime filling over the warm crust. Return it to the oven and bake for an additional 15-20 minutes, or until the filling is set and just slightly jiggly in the center.
  • Once baked, let the bars cool at room temperature for about 30 minutes. Then, cover the dish with plastic wrap and refrigerate for at least 2 hours before slicing into squares.
  • Cut into squares and serve chilled, optionally topped with a dollop of whipped cream, lime zest, or a small wedge of key lime for garnish.

Notes

For the best flavor, use fresh key lime juice. These bars can be made in advance and stored in the refrigerator for up to five days.
