  • 1 cup protein powder (vanilla or cheesecake flavor) For protein boost.
  • ½ cup almond or peanut butter Adds creaminess and healthy fats.
  • ½ cup Greek yogurt For added protein and creaminess.
  • cup honey or maple syrup Natural sweetener.
  • 2 pieces lemons (juice and zest) For flavor and freshness.
  • a pinch salt Enhances the flavors.
  • ¼ cup chopped nuts or seeds (optional) For added crunch.

Instructions
 

Preparation

  • Line an 8x8 inch baking dish with parchment paper for easy removal.
  • In a large bowl, combine rolled oats, protein powder, and a pinch of salt.
  • In a separate bowl, whisk together almond butter, Greek yogurt, honey (or maple syrup), lemon juice, and lemon zest until smooth.
  • Merge the wet ingredients into the dry ingredients. Stir until fully combined. If adding nuts or seeds, fold them in now.
  • Pour the mixture into the prepared baking dish, using a spatula to press it down evenly.
  • Place the dish in the refrigerator for at least 2 hours to set. Once firm, cut into bars.

Serving

  • Store in an airtight container in the fridge for up to a week or freeze for a longer shelf life.

Notes

Adjust sweetness according to preference. Ensure not to overmix the ingredients for a better texture. Experiment with flavors by adding vanilla extract or crushed almonds.
