  • 2 chicken breasts halved or pounded thin
  • Salt and black pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 3 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley chopped
  • Optional:
  • Lemon slices for garnish
  • Extra butter for richer sauce

Instructions
 

  • Prepare the chicken:
  • Season chicken with salt and pepper. Lightly dredge in flour, shaking off excess.
  • Sear the chicken:
  • Heat olive oil in a skillet over medium heat. Cook chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  • Make the sauce:
  • In the same skillet, melt butter and add garlic. Cook for 1 minute until fragrant. Add chicken broth and lemon juice, stirring to combine. Simmer for a few minutes.
  • Combine:
  • Return chicken to the skillet and spoon sauce over the top. Simmer for 2–3 minutes.
  • Finish and serve:
  • Add lemon zest and parsley. Serve warm with extra sauce.
