Instructions
 

Cooking Pasta

  • Begin by boiling a large pot of salted water. Add in the mafaldine pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water and drain the rest.

Sautéing Broccoli and Garlic

  • In a large skillet, melt the salty butter over medium heat. Add the finely chopped broccoli and sauté until tender, about 3-5 minutes. Incorporate the minced garlic and sauté for an additional 2 minutes until fragrant.

Preparing the Cream Sauce

  • Reduce the heat to low and pour in the heavy cream, mixing thoroughly. Stir in the lemon zest and juice, allowing the sauce to simmer for 2-3 minutes until slightly thickened.

Combining Pasta and Sauce

  • Add the drained mafaldine to the skillet, tossing gently to coat the pasta in the creamy lemon sauce. If the pasta seems too dry, gradually add reserved pasta water until you reach desired consistency.

Finishing with Parmesan

  • Remove the skillet from heat and fold in the Parmesan cheese until fully melted and incorporated. Season with kosher salt and fresh cracked pepper to taste.
