  • Peel and dice the mango and avocado, and slice the red onion finely. If using fresh herbs, ensure they are washed and chopped.

Mixing the Salad

  • In a large mixing bowl, gently toss together the diced mango, avocado, blueberries, and red onion, being careful not to mash the avocado to keep it chunky.

Dressing

  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour over the salad and toss gently to combine, adjusting seasoning as needed.

Final Touch

  • Just before serving, add the mint or cilantro and give it one last gentle toss.

Notes

For best results, use ripe mango and avocado to maximize flavor. Store leftovers in the refrigerator for up to a day, but the avocado may brown.
