Ingredients
  

  • Chia Pudding Base
  • 3 tablespoons chia seeds
  • 1 cup almond milk or coconut milk
  • 1 tablespoon maple syrup or honey
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Fruit Layers
  • 1 ripe mango diced
  • 1 dragon fruit diced
  • Optional squeeze of fresh lime juice
  • Optional Toppings
  • Shredded coconut
  • Granola
  • Hemp seeds
  • Greek yogurt for added protein
  • Mint leaves

Instructions
 

  • Make the Chia Pudding
  • In a bowl or jar, combine chia seeds, almond milk, maple syrup, vanilla extract, and salt.
  • Stir well and let sit for 5 minutes.
  • Stir again to prevent clumping.
  • Cover and refrigerate for at least 3–4 hours or overnight until thick.
  • Check Texture
  • The pudding should be thick and spoonable.
  • If too thick, stir in 1–2 tablespoons milk.
  • If too thin, add 1 teaspoon chia seeds and chill 30 minutes longer.
  • Prepare Fruit
  • Dice mango and dragon fruit into small, even cubes.
  • Toss mango with a squeeze of lime juice if desired.
  • Assemble the Parfait
  • Spoon a layer of chia pudding into a clear glass or jar.
  • Add a layer of mango.
  • Add another layer of chia pudding.
  • Top with dragon fruit.
  • Repeat layers if desired.
  • Finish & Serve
  • Top with shredded coconut or granola for crunch.
  • Serve immediately or chill until ready to enjoy.

Notes

  • Stir chia mixture twice during the first 10 minutes to prevent clumps.
  • Use the proper seed-to-liquid ratio (3 tablespoons chia to 1 cup milk) for thick texture.
