  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red chili flakes (optional for heat)
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup sliced red onion or shallots
  • Optional toppings: crumbled feta cheese, toasted nuts, or seeds

Preparation

  • Trim the cauliflower into small, bite-sized florets. Wash and dry them thoroughly.
  • In a bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, minced garlic, honey, salt, pepper, and red chili flakes until well combined.
  • In a large mixing bowl, toss the cauliflower florets with the marinade. Ensure every piece is well-coated.
  • Cover the bowl with plastic wrap or transfer the salad to an airtight container. Allow it to marinate in the fridge for at least 1-2 hours, or overnight for maximum flavor.
  • Before serving, fold in the chopped parsley and red onion.
  • Plate your salad, optionally topping with crumbled feta or toasted nuts for added texture and flavor.
