  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano Fresh oregano can also be used.
  • to taste salt and pepper

For the Tomatoes

  • 4 large ripe tomatoes, diced Use ripe heirloom or vine-ripened for best flavor.
  • handful fresh basil leaves, chopped Adds a fresh and aromatic finish.

Preparation

  • Start by slicing or dicing the tomatoes and ensure they are at room temperature for optimal flavor absorption.
  • In a bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper.
  • Add the diced tomatoes to the bowl and gently toss them in the marinade, ensuring each piece is well-coated.
  • Fold in the chopped basil for that fresh, aromatic finish.

Marinating

  • Cover the bowl with plastic wrap and let the tomatoes sit for at least 30 minutes at room temperature. For deeper flavor, refrigerate for a couple of hours or overnight.

Serving

  • Once marinated, taste and adjust the seasoning if necessary. Serve over your favorite salad greens or as a side dish.

Notes

Choose the best-quality ripe tomatoes for a flavorful dish. Allow the tomatoes to marinate longer for a better flavor outcome. Pair with different acids to experiment with flavors.
