  • 2 pieces ripe bananas The riper, the sweeter!
  • 1 cup medjool dates Pitted and chopped.
  • 1/3 cup coconut oil Melted, or use applesauce for a lighter option.
  • 2 pieces eggs Room temperature.
  • 1 teaspoon vanilla extract For extra depth of flavor.
  • 1 teaspoon baking soda To help it rise.
  • 1 cup whole wheat flour Substitute with almond flour for a gluten-free version.
  • 1/2 teaspoon salt To enhance the flavors.
  • Optional nuts, chocolate chips, or seeds For an extra punch.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • Soak the chopped dates in warm water for about 10 minutes to soften them. Drain before adding to the mixture.
  • In a large bowl, mash the ripe bananas with a fork or potato masher until smooth.
  • Incorporate melted coconut oil, eggs, and vanilla extract into the mashed bananas, mixing well.
  • In another bowl, whisk together whole wheat flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture. Fold in the dates gently until everything is well combined.
  • Pour the batter into the greased loaf pan and bake for 50-60 minutes. Use a toothpick to check; it should come out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store the bread in an airtight container at room temperature for up to 4 days. For longer storage, slice and freeze it.
