- 2½ cups chocolate sandwich cookies finely crushed
- 6 tablespoons butter melted
- Mint Layer
- 8 oz cream cheese softened
- 1 cup powdered sugar
- 1 teaspoon mint extract
- ½ teaspoon vanilla extract
- Green food coloring optional
- 1½ cups whipped topping thawed
- Chocolate Topping
- 1 cup chocolate chips
- 2 tablespoons heavy cream or butter
Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal.
Mix crushed cookies with melted butter until evenly combined.
Press firmly into the bottom of the pan to form the crust.
In a bowl, beat cream cheese until smooth.
Mix in powdered sugar, mint extract, vanilla, and food coloring if using.
Gently fold in whipped topping until light and fluffy.
Spread mint mixture evenly over the crust.
Melt chocolate chips with cream or butter until smooth.
Pour chocolate topping over the mint layer and spread evenly.
Refrigerate 3–4 hours, or until fully set.
Lift out using parchment and slice into bars.
