For the Egg Rolls

  • 12 pieces Egg roll wrappers Available in most grocery stores.
  • 1/4 cup Butter Melted, for brushing on egg rolls.
  • Oil for frying Vegetable or canola oil works best.
  • 1/2 cup Powdered sugar For dusting before serving.

Instructions
 

Preparation

  • In a bowl, mix the sliced peaches, sugar, cinnamon, nutmeg, and vanilla extract. Let it sit for about 10 minutes to let the flavors meld.

Assembly

  • Lay an egg roll wrapper on a flat surface, with one corner facing you. Spoon a small amount of the peach mixture into the center of the wrapper (about two tablespoons). Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with water.

Cooking

  • In a deep skillet, heat oil over medium heat. Carefully place the egg rolls in the oil, cooking until they are golden brown and crispy (approximately 2-3 minutes on each side). Remove and let drain on paper towels.

Serving

  • Once cooled slightly, dust the egg rolls with powdered sugar for that final sweet touch. Serve warm, with a scoop of vanilla ice cream or a drizzle of caramel sauce if desired.

Notes

Ensure your oil is hot enough before frying to avoid soggy egg rolls. Leftover egg rolls can be refrigerated for up to 3 days or frozen for up to 2 months.
