  • 2 tablespoons cornstarch For thickening the filling.
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

For the Cobbler Topping

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 1 cup milk
  • 0.5 cup unsalted butter, melted
  • 1 teaspoon cinnamon (optional)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine sliced peaches and raspberries with sugar, cornstarch, vanilla extract, and lemon juice. Let this sit for 10-15 minutes.
  • In another bowl, mix flour, sugar, baking powder, salt, and cinnamon (if using). Stir in milk and melted butter until just combined.

Assembly and Baking

  • Pour the fruit mixture into a greased 9x13-inch baking dish.
  • Spoon the cobbler topping over the fruit filling, spreading it evenly.
  • Bake for 35-40 minutes, until the topping is golden brown and the fruit is bubbly.

Serving

  • Let the cobbler cool for a few minutes before serving. Top with vanilla ice cream or whipped cream.
