- 4 cups mixed greens arugula, spinach, or spring mix
- ½ cup crumbled feta or goat cheese
- ¼ cup thinly sliced red onion
- ⅓ cup toasted pecans or walnuts
- Balsamic Dressing:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- ½ teaspoon Dijon mustard
- Pinch of salt
- Pinch of black pepper
- Optional Garnish:
- Fresh basil leaves
- Extra cracked black pepper
Prepare Dressing:
In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth. Set aside.
Prep Ingredients:
Wash and dry mixed greens thoroughly.
Slice peaches just before assembling.
Thinly slice red onion.
