Ingredients

  • 3 ripe peaches sliced
  • 4 cups mixed greens arugula, spinach, or spring mix
  • ½ cup crumbled feta or goat cheese
  • ¼ cup thinly sliced red onion
  • cup toasted pecans or walnuts
  • Balsamic Dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • ½ teaspoon Dijon mustard
  • Pinch of salt
  • Pinch of black pepper
  • Optional Garnish:
  • Fresh basil leaves
  • Extra cracked black pepper

Instructions
 

  • Prepare Dressing:
  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth. Set aside.
  • Prep Ingredients:
  • Wash and dry mixed greens thoroughly.
  • Slice peaches just before assembling.
  • Thinly slice red onion.
  • Toast nuts in a dry skillet over medium heat for 2–3 minutes until fragrant. Let cool.
  • Assemble Salad:
  • Add greens to a large serving bowl.
  • Arrange peach slices evenly on top.
  • Sprinkle with crumbled cheese, red onion, and toasted nuts.
  • Dress & Serve:
  • Drizzle dressing lightly over salad.
  • Toss gently just before serving.
  • Garnish with fresh basil or extra cracked pepper if desired.

  • Use ripe but firm peaches for best texture.
  • Toasting nuts enhances flavor and crunch.
