Meatloaf Base

  • 1 lb ground beef Can substitute with ground turkey for a leaner option.
  • 1 cup shredded cheese (Cheddar or Provolone) Other options like mozzarella or gouda can be used.
  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup beef broth

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a pan over medium heat, add a splash of oil and sauté the chopped onions and bell peppers until soft, about 5–7 minutes.
  • In a large bowl, combine the ground beef, sautéed veggies, breadcrumbs, eggs, garlic powder, salt, pepper, and cheese. Mix until just combined.
  • Transfer the meat mixture to a loaf pan or shape it into a loaf on a lined baking sheet.
  • Pour the beef broth over the meatloaf to keep it moist during cooking.
  • Place in the oven and bake for about 50–60 minutes, or until the internal temperature reaches 160°F (70°C).
  • Once baked, remove it from the oven and let it rest for about 10 minutes before slicing.
  • Serve with your favorite side dishes or on a toasted hoagie roll.

Notes

Avoid overmixing the ingredients to prevent a dense meatloaf. Ensure to let it rest after baking for better flavor and juiciness. Use a meat thermometer to check for doneness.
