  • 1 pound sausage (your choice: kielbasa, Italian, or smoked)
  • 12 oz frozen pierogi (potato and cheese preferred)
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parsley or chives for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until softened.
  • Add the sausage to the skillet and cook until browned and fully cooked, approximately 7-10 minutes.
  • In a large bowl, combine the cream of mushroom soup, sour cream, and a dash of salt and pepper. Stir until well combined.
  • In a greased 9x13 inch baking dish, spread a layer of frozen pierogi evenly on the bottom. Top with half of the sausage mixture and half of the cheese. Repeat the layers, finishing with the remaining cheese.
  • Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  • Let the casserole cool for a few minutes before serving. Sprinkle with fresh parsley or chives for garnish.

Notes

Customize your pierogi fillings and cheese varieties for added flavor. Make ahead by preparing the casserole a day in advance and refrigerating before baking.
