  • 1 cup crushed pineapple (drained) Ensure well-drained to prevent excess liquid.
  • 1 cup cream cheese (softened) Bring to room temperature before mixing.
  • 1 cup heavy cream Chilled for best results.
  • 1/2 cup powdered sugar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract

Preparation

  • In a large mixing bowl, combine the softened cream cheese and powdered sugar. Beat them together with a hand mixer until smooth and creamy.
  • Stir in the vanilla extract and the drained crushed pineapple. Mix until thoroughly combined.
  • In another bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese and pineapple mixture, taking care not to deflate the whipped cream.
  • Transfer the mousse to serving cups or a large bowl. Refrigerate for at least 2 hours, or overnight for best results.
  • Before serving, top each mousse with whipped cream and a sprinkle of toasted coconut.

Notes

Quality ingredients result in the best flavor. Chill bowls and whisk before whipping cream for maximum volume.
