Ingredients
  

  • * 2 large chicken breasts cut into cubes
  • * 2 cups fresh pineapple chunks
  • * 1 red bell pepper cut into chunks
  • * 1 green bell pepper cut into chunks
  • * 1 red onion cut into chunks
  • * ¼ cup soy sauce
  • * 2 tablespoons honey
  • * 2 tablespoons olive oil
  • * 2 cloves garlic minced
  • * 1 teaspoon grated ginger
  • * 1 tablespoon pineapple juice optional
  • * Salt and black pepper
  • * Optional: sesame seeds green onions

Instructions
 

  • In a bowl, whisk together soy sauce, honey, olive oil, garlic, ginger, and pineapple juice.
  • Add chicken and toss to coat, then marinate for 20–30 minutes.
  • Preheat grill to medium-high heat.
  • Thread chicken, pineapple, and vegetables onto skewers.
  • Lightly oil grill grates and place skewers on the grill.
  • Cook for 10–12 minutes, turning occasionally.
  • Brush with extra marinade during cooking if desired.
  • Cook until chicken reaches 165°F and is slightly charred.
  • Remove and let rest briefly before serving.
