  • 0.75 cups natural creamy peanut butter 190 grams
  • 0.33 cups honey or maple syrup for a vegan option (113 grams)
  • 0.33 cups mini chocolate chips 60 grams
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt

Optional Add-ins

  • 0.25 cups chopped nuts 30 grams
  • 2 tablespoons shredded coconut
  • 0.25 cups protein powder 30 grams

Preparation

  • In a bowl, mix the rolled oats, ground flaxseed, and mini chocolate chips (and any additional dry ingredients like nuts or protein powder) until well combined.
  • In a separate bowl, blend together the peanut butter, honey (or maple syrup), vanilla extract, and sea salt until smooth.
  • Pour the wet ingredients over the dry ingredients and mix thoroughly with a spatula or your hands.
  • Once everything is well combined, take small portions of the mixture and roll them into bite-sized balls, aiming for about 1 inch in diameter.
  • Place the energy balls on a tray and refrigerate for at least 30 minutes to firm up. Once set, transfer them to an airtight container for storage.

Notes

To keep your energy balls fresh, store them in an airtight container in the fridge for up to a week. For longer storage, freeze them for up to three months.
