  • 1/2 cup oil (extra light olive oil, vegetable, or canola) Provides moisture and richness.

  • 1 cup white chocolate chips Adds sweetness and texture.
  • 1/4 cup miniature semi-sweet chocolate chips For added flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the red velvet cake mix, oil, and eggs. Stir until the mixture is well combined and has a thick consistency.
  • Fold in the white chocolate chips and miniature semi-sweet chocolate chips.
  • Using a cookie scoop or tablespoon, portion out the dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  • Gently press 2-3 additional white chocolate chips on top of each cookie before baking.

Baking

  • Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are set, but the center is still soft.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes before baking for better shape. Store in an airtight container for up to a week or freeze for longer shelf life. Consider adding vanilla or almond extract for extra flavor.
