  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 2 large eggs
  • 1 3/4 cups buttermilk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring or beet juice for a natural alternative

Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preparation

  • Preheat your waffle iron according to the manufacturer’s instructions.
  • In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  • In another bowl, combine the eggs, buttermilk, vegetable oil, vanilla extract, and red food coloring.
  • Pour the wet ingredients into the dry ingredients. Stir until just combined—do not overmix.

Cooking

  • Lightly grease the waffle iron. Pour the batter into the iron and cook according to the manufacturer's instructions until golden brown.

Making the Frosting

  • Beat the softened cream cheese and butter together. Gradually add the powdered sugar and vanilla until smooth.

Serving

Notes

Ensure your waffle iron is hot enough for crisp waffles. Experiment with toppings like whipped cream and nuts for extra flavor.
