Ingredients
  

For the pie crust and filling

  • 1 pre-made pre-made pie crust
  • 1 cup shredded coconut divided
  • 1 cup caramel sauce for drizzling on top
  • 1 cup chocolate chips
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • Place the pre-made pie crust into a pie dish and set aside while you prepare the filling.

Mixing the Filling

  • In a mixing bowl, combine the flour, brown sugar, granulated sugar, baking soda, and salt.
  • In another bowl, melt the unsalted butter and allow it to cool slightly before adding the egg and vanilla extract. Mix well.
  • Combine the wet ingredients with the dry mixture until just blended. You’ll have a thick batter.

Adding Chocolate and Coconut

  • Fold in the chocolate chips and half of the shredded coconut, ensuring they are evenly distributed throughout the batter.

Assembling the Pie

  • Spread the mixture into the pie crust, smoothing it out evenly.
  • Top the filled pie with the remaining shredded coconut, pressing it gently into the batter.

Baking

  • Place the pie in your preheated oven and bake for about 25-30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Allow the pie to cool slightly before drizzling your caramel sauce over the top.

Serving

  • Once the pie has cooled, slice it up, serve it on a plate with an extra sprinkle of coconut if you wish, and enjoy the delightful harmony of flavors.

Notes

Store the pie in an airtight container in the refrigerator for up to a week. It can also be frozen for up to a month. Allow to thaw in the fridge overnight before serving.
