Ingredients
  

Main Ingredients

  • 1 pack Sausages (turkey, or plant-based) Use your favorite variety.
  • 2 cups Pancake Mix A store-bought mix or homemade.
  • 1 cup Milk To create a smooth batter.
  • 2 large Eggs For binding and fluffiness.

Optional Add-Ins

  • 1 tsp Cinnamon For added flavor.
  • 1 tsp Vanilla Extract Optional for sweetness.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  • If using raw sausages, cook them in a skillet until browned and cooked through, then cut into bite-sized pieces.

Mixing Batters

  • In a large bowl, combine the pancake mix, milk, and eggs. Stir until just combined, leaving some lumps.

Assembling and Baking

  • Place a piece of sausage in each mini muffin cup and pour the pancake batter over the sausage until about three-quarters full.
  • Bake in the preheated oven for 12-15 minutes until golden brown and a toothpick comes out clean.
  • Allow to cool in the pan for a few minutes before removing.

Serving

  • Serve warm, optionally with maple syrup or condiments.

Notes

You can freeze extra bites for busy mornings. Experiment with different types of sausages and pancakes.
