Ingredients
  

For the Chicken

  • 4 pieces chicken breasts (pounded to 1/2-inch thickness) For even grilling
  • 2 tbsp olive oil For marinating the chicken
  • 1.5 tsp Italian seasoning
  • 0.75 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

For the Toppings

  • 4 slices fresh mozzarella (preferably BelGioioso)
  • 4 slices tomato (cut into 1/4-inch thick rounds)
  • 3 tbsp fresh basil (thinly sliced into ribbons)

For the Balsamic Glaze

  • 0.5 cup balsamic vinegar (preferably Pompeian)
  • 1.5 tbsp brown sugar

Preparation

  • In a large bowl, mix olive oil, Italian seasoning, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts and coat them thoroughly. Let them marinate for at least 30 minutes, or up to 4 hours.
  • In a small saucepan, combine balsamic vinegar and brown sugar. Heat over medium heat until simmering, then reduce heat to low and let it thicken for about 10 minutes. Set it aside to cool.

Grilling

  • Preheat your grill to medium-high heat.
  • Place the marinated chicken on the grill and cook for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  • In the last minute of grilling, place a slice of mozzarella on each chicken breast to allow it to melt slightly.

Assembly

  • Place each grilled chicken breast on a plate. Top with tomato slices and fresh basil ribbons, then drizzle with the balsamic glaze.
  • This dish is best served warm but can also be enjoyed cold as leftovers.

Notes

For best results, pound chicken breasts evenly, use fresh ingredients, and avoid overcooking. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months.
