  • 3 to 4 pounds beef chuck roast Ideal cut for tenderness and flavor.
  • 1 packet Italian dressing mix
  • 2 cups beef broth Essential for cooking meat tenderly.
  • 1 jar giardiniera Use mild or hot based on your preference.
  • 1 medium onion, sliced For layering in the slow cooker.
  • 4 cloves garlic, minced Adds robust flavor.
  • to taste Pepperoncini peppers (optional) For added spice.
  • for serving Italian rolls or hoagie buns For assembling sandwiches.
  • 1 slice Provolone cheese (optional) For a cheesy twist.

Instructions
 

Preparation

  • Trim excess fat from the beef chuck roast if necessary, leaving good marbling for flavor.
  • Layer the sliced onions at the bottom of the slow cooker.
  • Place the beef roast on top of the onions and pour the Italian dressing mix over the meat.
  • Add the minced garlic and beef broth to the slow cooker.

Cooking

  • Set the slow cooker to low and cook for 8 to 10 hours, or on high for 4 to 6 hours until the meat is tender.
  • Remove the beef from the slow cooker and shred it into bite-sized pieces using two forks.
  • Return the shredded beef to the slow cooker and stir it into the broth.

Assembly

  • Serve the hot beef on Italian rolls, spooning some of the cooking liquid and giardiniera over the top.
  • Add a slice of provolone cheese if desired.

Notes

For extra flavor, let the beef rest in the broth for 30 minutes before serving.
