Ingredients
  

For the Grilled Cheese

  • 2 slices Slices of your favorite bread (sourdough or brioche work great)
  • 2-3 slices American cheese
  • 1 slice Cheddar cheese
  • 1-2 tablespoons Butter (for frying)

For the Special Sauce

  • 1/2 cup Mayonnaise
  • 2 tablespoons Ketchup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Pickles, finely chopped
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • a pinch Black pepper

Instructions
 

Prepare the Special Sauce

  • In a small bowl, combine mayonnaise, ketchup, Dijon mustard, chopped pickles, garlic powder, onion powder, and black pepper. Mix until smooth and set aside.

Butter the Bread

  • Spread butter generously on one side of each slice of bread.

Assemble the Sandwich

  • On the unbuttered side of one slice, place the slices of American cheese followed by the cheddar cheese.
  • Spread a generous amount of the special sauce on the unbuttered side of the other slice of bread.

Cook the Sandwich

  • Heat a skillet over medium heat. Place the sandwich in the skillet with the buttered side down.
  • Cook for about 3-4 minutes or until golden brown. Carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese has melted.

Serve

  • Once your sandwich is cooked to perfection, remove it from the skillet, cut it in half, and enjoy!

Notes

Use quality ingredients for best flavor. Keep the heat moderate to avoid burning bread before the cheese melts.
