Ingredients
  

Cookie Dough

  • 1 cup salted butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/3 cups all-purpose flour
  • 2 teaspoons vanilla extract
  • 3/4 teaspoon baking soda
  • 1 cup mini chocolate chips

S'mores Layer

  • 4 sheets graham crackers Crushed
  • 8 large marshmallows Cut in half
  • 2 tablespoons mini chocolate chips
  • 1 tablespoon salted butter For greasing dish
  • 1/2 teaspoon vanilla
  • 2 teaspoons salted butter For greasing dish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the salted butter, brown sugar, and granulated sugar until fluffy, about 3 to 5 minutes.
  • Add in the egg and vanilla extract, mixing until fully combined.
  • In a separate bowl, whisk together the flour, baking soda, and crushed graham crackers. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  • Fold in the mini chocolate chips until evenly distributed.
  • Grease a baking dish with the tablespoon of salted butter or line it with parchment paper.

Layering

  • Press half of the cookie dough into an even layer in the baking dish.
  • Top with the halved marshmallows and sprinkle the remaining chocolate chips.
  • Crumble the rest of the dough over the top.

Baking

  • Bake for 20-25 minutes, or until the top is golden brown and marshmallows are puffed.
  • Allow to cool in the pan for about 10 minutes before cutting into squares or bars.

Notes

Don't overmix the dough to keep the cookies tender. You can substitute regular chocolate chips with dark chocolate or peanut butter chips for a twist.
