Ingredients
  

For the blondies

  • 1 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs Use room temperature.
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Zest of 1 lemon Use a fresh lemon for best flavor.
  • 1 cup fresh strawberries, chopped Use ripe strawberries.

For the glaze

  • 1 cup powdered sugar
  • 2 tablespoons strawberry puree Use fresh strawberries to make the puree.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each addition, then add the vanilla extract and blend until combined.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  • Gently fold in the lemon zest and chopped strawberries until evenly distributed.

Baking

  • Pour the batter into the prepared baking dish, smoothing the top with a spatula.
  • Bake for about 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Glazing

  • Allow the blondies to cool completely in the pan on a wire rack.
  • Prepare the glaze by whisking together powdered sugar and strawberry puree until smooth, then drizzle over the cooled blondies.

Notes

Store blondies covered in an airtight container at room temperature for up to 3 days, or refrigerate to extend their freshness. They can also be frozen for up to three months.
