Popsicle Ingredients

  • 2 cups fresh strawberries, hulled and chopped Use fresh, local strawberries for the best flavor.
  • 1 cup freshly squeezed lemon juice (about 4-6 lemons) For a more tart flavor, increase the lemon juice.
  • 1/2 cup sugar Adjust the sweetness to your taste.
  • 1 cup water Used to dilute the mixture.
  • 1/4 cup fresh mint leaves (optional) Add for an unexpected flavor twist.

Preparation

  • Wash the strawberries thoroughly, remove the tops, and chop them into smaller pieces.
  • In a blender, combine the chopped strawberries, lemon juice, sugar, and water. Blend until smooth. If a chunkier texture is preferred, pulse a few times.
  • Taste the mixture and adjust sweetness with more sugar or tartness with more lemon juice, as necessary.
  • Pour the blended mixture into popsicle molds, leaving space at the top for expansion.
  • Insert sticks into the molds if included, or freeze for 1-2 hours before adding wooden sticks.
  • Freeze for at least 4-6 hours, or overnight for best results.
  • To release the popsicles, run warm water over the outside of the molds for a few seconds.

Notes

Strawberry Lemonade Popsicles can be served with fresh fruit or as a fun garnish for summer cocktails. Wrap them individually in plastic wrap or foil to prevent freezer burn when storing.
