  • 3/4 cup Water The binding agent for the dough.
  • 8 pieces Fresh Strawberries Use ripe, juicy strawberries for filling.

Preparation

  • Wash and dry the strawberries. Remove the stems and slice them in half if they are particularly large.
  • In a microwave-safe bowl, combine glutinous rice flour, sugar, and water. Mix until smooth.
  • Heat the mixture in the microwave for about 1 minute, stir, then heat for another 30 seconds until sticky and slightly translucent.
  • Dust a clean surface with cornstarch. Once the dough cools slightly, knead it until smooth.
  • Roll the mochi dough into small balls, flatten each into a disc.
  • Place a strawberry in the center of each disc and fold the edges over to seal it completely.
  • Roll each finished piece in cornstarch to prevent sticking. Let rest in the fridge for about 30 minutes.
  • Serve fresh and chilled for the best experience.
