Ingredients
  

For the Stuffed Cucumbers

  • 1 large cucumber Firm and fresh
  • 1 cup cream cheese Can substitute with Greek yogurt for a lighter option
  • 1/4 cup diced bell pepper
  • 1/4 cup diced red onion
  • 1 tablespoon fresh dill or parsley
  • to taste salt and pepper For seasoning

Preparation

  • Wash the cucumber thoroughly, cut off the ends and slice it in half lengthwise.
  • Scoop out the seeds using a spoon or melon baller to create a cavity for the filling.

Make the Filling

  • In a mixing bowl, combine cream cheese, diced bell pepper, diced red onion, and dill or parsley.
  • Mix until smooth, then season with salt and pepper to taste.

Stuff the Cucumbers

  • Fill each cucumber half with the mixture using a spoon or piping bag.

Slice and Serve

  • Cut the stuffed cucumbers into bite-sized pieces and arrange them on a platter.

Chill for Extra Flavor (Optional)

  • Refrigerate the stuffed cucumbers for about 30 minutes before serving to let the flavors meld.

Notes

Experiment with flavors by adding crumbled feta, nuts for crunch, or different herbs and spices. Avoid soft cucumbers for structure, and fill just before serving to maintain crispness.
