  • 1 teaspoon vanilla extract

For the Crunch Layer

  • 1 cup crushed graham crackers or vanilla wafer cookies
  • ¼ cup unsalted butter, melted
  • 2 tablespoons brown sugar

For Garnish

Instructions
 

Prepare the Crunch Layer

  • In a medium bowl, mix together crushed graham crackers or vanilla wafer cookies, melted butter, and brown sugar until well combined.
  • Press this mixture into the bottom of serving glasses or a large trifle dish.

Make the Peach Mousse

  • In a blender, combine the diced peaches, powdered sugar, and vanilla extract. Blend until smooth.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the peach mixture into the whipped cream until fully combined.
  • For a firmer mousse, add dissolved gelatin.

Layer Your Trifles

  • Begin with a layer of the crunch mixture at the bottom, followed by a generous spoonful of peach mousse.
  • Repeat the layers until you reach the top of the glass.
  • Finish with a dollop of whipped cream, extra peach slices, and a mint leave for garnish.

Chill and Serve

  • Refrigerate the assembled trifles for at least 1 hour before serving to allow the flavors to meld.

Notes

Use ripe peaches for the best flavor. Chill serving glasses for an extra refreshing touch. Can prepare components a day ahead and layer shortly before serving.
