Ingredients
  

  • 1 large head cauliflower chopped into florets
  • 2 cups kale stems removed and chopped
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup unsweetened plant-based milk almond or oat
  • 1 teaspoon thyme
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Lemon juice for finishing
  • Optional toppings: roasted chickpeas croutons, seeds

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and cook for 4–5 minutes until softened.
  • Stir in garlic and cook for 1 minute until fragrant.
  • Add cauliflower florets and vegetable broth.
  • Bring to a boil, then reduce to a simmer and cook for 10–15 minutes until cauliflower is tender.
  • Add chopped kale and cook for 3–5 minutes until wilted.
  • Blend soup using an immersion blender (or transfer to a blender) until smooth and creamy.
  • Stir in plant-based milk, thyme, smoked paprika, salt, and pepper.
  • Simmer briefly, then adjust seasoning to taste.
  • Add a squeeze of lemon juice for brightness.
  • Let sit for a few minutes before serving and garnish as desired.
