- 1 large head cauliflower chopped into florets
- 2 cups kale stems removed and chopped
- 1 small onion diced
- 3 cloves garlic minced
- 4 cups vegetable broth
- 1 cup unsweetened plant-based milk almond or oat
- 1 teaspoon thyme
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Lemon juice for finishing
- Optional toppings: roasted chickpeas croutons, seeds
