Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix the room temperature butter, 1 cup of all-purpose flour, and 1/4 cup of powdered sugar until you achieve a crumbly consistency.
  • Press the mixture into the bottom of a greased 9x9-inch baking dish.

Baking the crust

  • Bake in your preheated oven for about 15 minutes, or until the crust starts to turn a light golden brown.

Making the filling

  • While the crust is baking, whisk together the eggs, granulated sugar, sifted flour, lemon juice, and lemon zest in a separate bowl until smooth and well-combined.

Combining and finishing

  • Once the crust is ready, pour the lemon filling over it.
  • Return the baking dish to the oven and bake for another 20-25 minutes, or until the filling is set and the edges are slightly golden.

Cooling and serving

  • After baking, let the dish cool completely.
  • Dust the top with powdered sugar.
  • Cut into squares or rectangles, and serve.
