Ingredients
  

  • 2 large chicken breasts sliced or cubed
  • 1 cup raspberries fresh or frozen
  • 1 –2 jalapeños sliced
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: cornstarch for thickening
  • Optional: lime juice

Instructions
 

  • Heat olive oil in a skillet over medium-high heat.
  • Add chicken, season with salt and pepper, and cook for 5–7 minutes until browned and cooked through.
  • Remove chicken and set aside.
  • In the same skillet, add garlic and jalapeños and cook for 1–2 minutes.
  • Add raspberries, honey, and soy sauce.
  • Stir gently as raspberries break down into a sauce.
  • Return chicken to the skillet and toss to coat.
  • Simmer for 3–5 minutes until sauce thickens.
  • Add lime juice if desired and serve warm.

Notes

  • Remove jalapeño seeds for less heat or keep them for extra spice.
  • Do not overcook chicken to keep it juicy.
  • Adjust sweetness and spice to taste.
  • Add cornstarch slurry if a thicker sauce is desired.
  • Store leftovers in the fridge for up to 3 days.
