Ingredients

For the Chicken

  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • to taste salt and pepper

For the Teriyaki Sauce

  • ¼ cup soy sauce (low sodium recommended)
  • 2 tablespoons brown sugar (or honey) for a healthier twist
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced (or ½ teaspoon ground ginger)

For the Broccoli

  • 2 cups broccoli florets (fresh or frozen)
  • sesame seeds for garnish (optional)
  • green onions, chopped (optional)

Instructions

Preparation

  • In a small bowl, mix the soy sauce, brown sugar, rice vinegar, garlic, ginger, cornstarch, and water. Whisk until smooth and set aside.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces, seasoning with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  • If using fresh broccoli, add it to the skillet and stir-fry for about 2-3 minutes until it becomes bright green and tender-crisp. For frozen broccoli, you can add it directly to the pan, adjusting the cooking time accordingly.

Final Steps

  • Pour the teriyaki sauce over the chicken and broccoli. Stir well to coat everything evenly, cooking for an additional 2-3 minutes until the sauce thickens and is sticky.
  • Garnish with sesame seeds and chopped green onions if desired. Serve your teriyaki chicken with broccoli over steamed rice or noodles for a complete meal.

Notes

Marinate the chicken in the teriyaki sauce for at least 30 minutes for extra flavor. You can adjust the sweetness of the sauce and add other vegetables like bell peppers or snap peas for variation. Avoid overcooking the chicken to prevent it from becoming dry.
