  • 1 red bell pepper thinly sliced
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 3 cups vegetable or chicken broth
  • 1 13.5-ounce can full-fat coconut milk
  • Flavor Base:
  • 1 –2 tablespoons Thai red curry paste adjust to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar
  • Juice of ½ lime
  • Optional Garnish:
  • Fresh cilantro
  • Sliced green onions
  • Red pepper flakes
  • Extra lime wedges

Instructions
 

  • Prep Ingredients
  • Slice bell pepper and mushrooms.
  • Mince garlic and grate ginger.
  • Measure broth and coconut milk.
  • Build Flavor
  • Heat olive oil in a large pot over medium heat.
  • Add garlic and ginger; cook 30 seconds until fragrant.
  • Stir in red curry paste and cook 1 minute to deepen flavor.
  • Create the Broth
  • Pour in broth and coconut milk.
  • Stir well to combine.
  • Add soy sauce and brown sugar.
  • Bring to a gentle simmer.
  • Cook Dumplings
  • Add frozen dumplings directly to the pot.
  • Simmer 5–7 minutes (or according to package instructions).
  • Add Vegetables
  • Add bell pepper and mushrooms.
  • Simmer 3–4 minutes until slightly tender.
  • Stir in spinach during the last minute until wilted.
  • Finish & Serve
  • Turn off heat and stir in lime juice.
  • Taste and adjust seasoning if needed.
  • Garnish with cilantro, green onions, or red pepper flakes.
  • Serve warm.
