  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee granules Essential for tiramisu flavor

Preparation

  • Preheat your oven to 350°F (175°C).
  • In one bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • In another bowl, cream the softened butter and sugar together until light and fluffy.
  • Add eggs, vanilla extract, and instant coffee to the butter and sugar mixture, beat until well combined.
  • Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
  • Fold in chocolate chips if desired.
  • Scoop tablespoon-sized amounts of dough onto a lined baking sheet, spacing them about two inches apart.

Baking

  • Bake for 10-12 minutes, or until edges are firm but centers are soft.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra flavor, chill the dough for at least 30 minutes before baking. Pair cookies with a creamy mascarpone dip or serve them with coffee.
