  • 1.5 cups crushed graham crackers
  • 0.5 cup unsweetened shredded coconut
  • 0.5 cup melted butter or coconut oil Use coconut oil for a more tropical flavor.
  • 2 tablespoons sugar (optional)

For the Filling

  • 1 can cream cheese, softened
  • 1 cup whipped cream or cool whip
  • 0.33 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 cups chopped tropical fruits (mango, pineapple, kiwi, and berries) Use a mix for the best flavor.

For Garnish

Preparation

  • In a bowl, mix together the crushed graham crackers, shredded coconut, melted butter, and sugar (if using). Press this mixture evenly into the bottom and up the sides of a 9-inch pie dish. Refrigerate while you prepare the filling.

Making the Filling

  • In a mixing bowl, beat together the softened cream cheese, whipped cream, sweetened condensed milk, and vanilla extract until smooth and creamy.
  • Gently fold in your chopped tropical fruits until they are well distributed throughout the filling mixture.

Assembling the Pie

  • Pour the filling into your prepared crust, smoothing it out to ensure an even layer.

Chilling

  • Cover the pie with plastic wrap and place it in the refrigerator for at least 3 hours, preferably overnight. This helps the pie set and intensifies the flavors.

Serving

  • Once chilled, remove the pie from the fridge, decorate with extra fruit slices and mint leaves if desired, slice, and serve chilled.

Notes

Use ripe fruits for max flavor. This pie can be made a day in advance.
