Ingredients
  

For the Pasta

  • 2 cups uncooked Bow-Tie Protein Pasta (or Penne)
  • 1 teaspoon Kosher Salt (for the pasta water)

For the Salad

  • 1 head Romaine Lettuce, chopped
  • 1.5 cups Chickpeas (15oz can)
  • 1 cup Grape Tomatoes, sliced
  • 0.75 cup store-bought Vegan Caesar Dressing (or homemade)*
  • 0.25 cup grated Vegan Parmesan Cheese
  • 1 tablespoon Nutritional Yeast
  • 0.5 teaspoon Black Pepper
  • 0.5 cup Croutons (optional)*

Instructions
 

Preparation

  • In a large pot, bring water to a boil and add the kosher salt. Add the bow-tie pasta and cook until al dente. Drain and rinse under cold water to cool.
  • Chop the romaine lettuce and slice the grape tomatoes. Rinse and drain the chickpeas.

Mixing

  • In a large bowl, combine the cooked pasta, chopped romaine, chickpeas, and grape tomatoes.
  • Pour your vegan Caesar dressing over the salad mixture. Toss until well coated.
  • Sprinkle in the grated vegan Parmesan, nutritional yeast, and black pepper. Toss again to mix thoroughly.
  • Add croutons just before serving to maintain their crunch.

Notes

Chill before serving to allow flavors to meld. Homemade dressing can be made with cashews, garlic, lemon juice, and nutritional yeast. Consider adding cucumbers or bell peppers for extra crunch.
