- 2 cups full-fat coconut milk
- 1 cup raw cashews soaked for 2 hours and drained
- ¾ cup maple syrup
- 1 tablespoon vanilla extract
- ¼ teaspoon salt
- A few drops blue natural food coloring
- 1 cup vegan chocolate sandwich cookies chopped

Soak the raw cashews in warm water for about 2 hours, then drain and rinse.
Add the following ingredients to a high-speed blender:
Coconut milk
Soaked cashews
Maple syrup
Vanilla extract
Salt
Blend until the mixture becomes completely smooth and creamy with no cashew pieces remaining.
Add a few drops of blue food coloring and blend briefly until evenly mixed.
