Ingredients
  

For the roasted cauliflower

  • 1 head cauliflower Washed and cut into bite-sized florets.
  • 2 tablespoons olive oil Used for roasting.
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

For assembling tacos

  • Corn or flour tortillas
  • 1 bunch fresh cilantro, chopped For topping.
  • 1 avocado, sliced For topping.
  • Lime wedges For squeezing over tacos.
  • Optional toppings: diced tomatoes, red onion, vegan sour cream, or your favorite salsa

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and cut the cauliflower into bite-sized florets.

Roasting

  • In a large mixing bowl, combine the cauliflower with olive oil, cumin, paprika, garlic powder, salt, and pepper. Toss until the cauliflower is evenly coated with the spices.
  • Spread the seasoned florets on a baking sheet lined with parchment paper in a single layer. Roast for 25-30 minutes, or until golden brown and tender, flipping halfway through.

Assembling

  • While the cauliflower is roasting, warm your tortillas in a skillet over medium heat for about one minute on each side.
  • Once the cauliflower is roasted, build your tacos starting with a tortilla, adding a generous portion of the roasted cauliflower followed by avocado slices, fresh cilantro, and a squeeze of lime.
  • Enjoy your tacos and savor every bite!

Notes

Don't overcrowd the baking sheet, and be generous with the seasoning to enhance flavor. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
