These refreshing vegan fruit popsicles combine juicy watermelon and tangy kiwi for a delightful summertime treat.

Ingredients
  

For the Watermelon Layer

  • 4 cups seedless watermelon, cubed Use ripe watermelon for the best flavor.
  • 1-2 tablespoons lime juice Optional, for added zest.

For the Kiwi Layer

  • 4 ripe kiwis peeled and sliced Make sure they are ripe for sweetness.
  • 1-2 tablespoons agave syrup or maple syrup Adjust based on your sweetness preference.

Preparation

  • Blend the watermelon cubes in a blender until smooth. Add lime juice if desired.

Assembly

  • Fill your popsicle molds about 1/2 to 2/3 full with the watermelon puree, leaving some space for the kiwi layer.
  • Insert sticks into the molds and freeze for about 2 hours or until set.
  • Blend the sliced kiwis and agave syrup in the blender until smooth.
  • Once the watermelon layer is set, pour the kiwi mixture on top, filling the molds completely.
  • Return the popsicles to the freezer for a minimum of 4 additional hours or until fully frozen.

Serving

  • Run warm water over the outside of the molds for a few seconds, then gently pull out the popsicles.
  • Enjoy the tangy and sweet combination of watermelon and kiwi!

Notes

Use very ripe fruits for best flavor. You can add fresh mint or basil for an herbal twist or swirl in coconut milk for creaminess.
