Preparation

  • Cut the watermelon into chunks, removing any seeds. The riper the fruit, the sweeter your ice will be!
  • In a blender, combine your watermelon chunks, sugar, lime juice, and salt. Blend until smooth.
  • If you prefer a smoother texture, strain the mixture through a fine mesh sieve to remove any pulp.

Freezing

  • Pour the mixture into a shallow container and place it in the freezer.
  • Let it freeze for about 4-5 hours. Every hour, stir the mixture with a fork to break up any ice crystals.

Serving

  • Once fully frozen, scrape the surface with a fork to give it that classic Italian ice texture.
  • Serve in bowls, garnished with mint leaves if desired.

Notes

For the best results, regularly stir as it freezes to avoid a solid block of ice. Watermelon Italian ice is naturally gluten-free and can last up to two weeks in the freezer.
