  • 1 cup fresh watermelon puree (about 1/4 of a medium watermelon) Opt for ripe watermelon for the best flavor.
  • 1.5 cups dark chocolate chips Use high-quality dark chocolate for a richer taste.
  • 1/4 cup coconut cream Adds creaminess to the chocolate.
  • 1/2 teaspoon vanilla extract
  • 1 pinch sea salt

Preparation

  • Prepare the watermelon puree by slicing the watermelon into chunks and blending until smooth. Strain through a fine mesh to remove excess pulp if desired.
  • In a microwave-safe bowl, melt the dark chocolate chips and coconut cream, microwaving in 30-second intervals and stirring in between until fully melted and smooth.
  • Mix the melted chocolate with the watermelon puree, vanilla extract, and a pinch of sea salt until well combined.
  • Pour the mixture into a container, cover it, and refrigerate for at least 2 hours until firm.
  • Once chilled, use a cookie scoop or your hands to form small balls, about 1 inch in diameter.

Coating and Setting

  • Roll the truffles in your choice of toppings like shredded coconut, crushed pistachios, or leave them bare.
  • Refrigerate the truffles again for an additional 30 minutes to set.

Notes

Store truffles in an airtight container in the refrigerator for up to a week or freeze for up to three months. Ensure layers are separated with parchment paper to avoid sticking.
