Preparation

  • In a large mixing bowl, add your rolled oats, almond butter, honey or maple syrup, and vanilla extract. Mix until all the ingredients are well combined.
  • Add the ground flaxseed, white chocolate chips, and fresh raspberries. Gently fold them into the mixture, being careful not to smash the raspberries.
  • Once everything is mixed, use your hands to form small balls (about 1 inch in diameter). If your mixture feels too sticky, wet your hands slightly to prevent sticking.
  • Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to help them firm up.
  • After your energy balls have set, you can enjoy them immediately or transfer them to an airtight container for future snacking.
