  • 1/4 cup cornmeal
  • 1 large egg
  • 1 teaspoon baking powder

Preparation

  • Begin by grating the zucchinis and placing them in a clean kitchen towel to squeeze out excess moisture.
  • In a large mixing bowl, combine the grated zucchini, corn kernels, cheddar cheese, all-purpose flour, cornmeal, egg, baking powder, salt, and pepper. Stir until well incorporated.
  • In a spacious frying pan, pour enough oil to cover the bottom and heat over medium-high heat until shimmering.
  • Using a tablespoon or your hands, scoop out a small portion of the mixture and gently flatten it into round patties.
  • Carefully place the fritters in the hot oil, ensuring not to overcrowd the pan. Cook for about 3-4 minutes on each side until golden brown and crisp.
  • Once cooked, transfer fritters to a paper towel-lined plate to absorb excess oil. Serve warm.

Notes

Top tips include squeezing zucchini to avoid soggy fritters, experimenting with different cheeses, adding herbs and spices, and keeping cooked fritters warm in a low oven.
